[Recipe of the Week: Korean Seitan Burrito]

1 container of Ray's Seitan, drained and rinsed
1 batch of Korean BBQ sauce (like Koji)
1 cucumber, cut into strips lengthwise
1 onion, diced
1 orange pepper, cut into strips
1 bunch of cilantro
1 bunch of mung bean sprouts (find at local Asian market)
kimchi, or shredded cabbage if kimchi is not available
1. Coat seitan in BBQ sauce and let marinate.
2. Saute onion and pepper in oil over medium high heat for 3 minutes.
3. Add seitan and cook for 5 minutes, stirring through.
4. Assemble burrito by layering tortilla with seitan mixture, kimchi, cucumber, cilantro, and salsa.
Top with sprouts and roll.

As I am sure you have noticed on this site, I am in the middle of a bathroom remodel. Once it is complete (should be this week), I plan on reorganizing my garage which is a bit of a disaster at the moment. This DIY from Instructables is a really simple and good idea.
